Thomas Gravouille, food and beverage manager at the Clos Belle Juliette, the bar/restaurant of the Hotel & Spa la Belle Juliette, explains how he came to work at the hotel, and gives us some of his favourite addresses nearby.

I love people, and travel, so choosing to study tourism in Lyon seemed natural to me. During my studies, I had various student jobs as a night receptionist and head waiter, and discovered a world I was going to love: hospitality.

This realisation led me to continue my studies at the Vatel School Paris. As part of my final year I jumped at the chance to have work experience at the Hotel & Spa la Belle Juliette as the manager’s assistant. I’m now really happy to be the Food and Beverage Manager at the Clos Belle Juliette, a post I’ve occupied since the beginning of September.

I love my work, and I think it’s really important to give individualised service to each of our customers, by giving advice about what to eat and drink. I’m always on the lookout for new combinations of tastes, and I really like the creative part of my work, like devising the signature cocktails signatures that you can enjoy at the Clos Belle Juliette!

I’m also lucky enough to work with a team of people who love what they do and emanate positive energy while investing themselves in their different roles.
